Once in a while, I like making healthy breakfasts, for example, banana pancakes with maple syrup, topped with my favorite berries. Nothing beats waking up and having a feel-good breakfast that is loaded with all the nutrition one needs for the rest of the day–protein, vitamins, minerals, carbohydrates, and more.

I am not a big fan of traditional pancakes; I think they are too dry and bland for my taste, plus they get soggy when it soaks up the syrup. I like pancakes my mother’s way, which is similar to French crepes.

Filled with slightly browned bananas, banana pancakes are absolutely delicious, especially with maple syrup. I also love topping my banana pancakes with fresh berries–blackberry, blueberry, strawberry, or raspberry. Berries give the banana pancakes a refreshing flavor, not to mention adding beautiful color to the serving.

Try making these banana pancakes when you have all the sweet time in the morning. You will find it rewarding.

    Alternatively, the same thing works really well with some Granny Smith apples.

    Lookin oh so delicious! I don’t really like bananas but those seriously look good. You should enjoy them while listening to Jack Johnson’s Banana Pancakes song.

    • :) I believed some Jack Johnson’s tune was in my head making these banana pancakes in the morning. But not the Banana Pancakes song, since it was bright and shiny when I made them. Check out the lights on the pictures :)

    This looks soooo much better than just regular pancakes! Yum! I can’t wait to try these tomorrow morning. Maybe if you use really ripe bananas (when they are turning brown), you could skip the step of cooking them in the pan and just drizzle melted butter on them instead.

    I had already mashed my bananas with eggs and then discovered I was out of milk! Found and made your recipe (with blueberries and vanilla yogert on top, bananas in the batter). YUM!! Thanks for posting it!

    I followed ur recipe n tried a few times but no way am I able to spread the batter so thinly to make it looks like yours! After showing my Hubby the photo of ur banana crepe, he commented,”wow! Hers is hotel standard, urs is housewife standard. ” Can u kindly share with me how to spread the batter evenly n thinly?

    • So sorry to hear that, what I did was quickly swirl it around the pan so it’s in a thin coat. You might want to put in less batter in the pan so it helps to spread. If you still think it’s too thick, then add a little water.

    I tried your excellent recipe, but made it even more Malaysian by substituting the maple syrup with gula apong (nipah palm sugar). Gula melaka (commercial palm sugar) should also work just as well.

    I have a little suggestion for this Banana Pancake recipe. Follow the recipe step except that the banana be (pulsed) pureed instead of being sliced. Next spread the puree on the pancake before folding. This will enhance the taste of the pancake because the pureed banana is integrated into the pancake. In sliced form the banana will taste independently of the pancake.
