I have a little suggestion for this Banana Pancake recipe. Follow the recipe step except that the banana be (pulsed) pureed instead of being sliced. Next spread the puree on the pancake before folding. This will enhance the taste of the pancake because the pureed banana is integrated into the pancake. In sliced form the banana will taste independently of the pancake.
