Juicy Chicken Meatballs

She is an artist so I invited her over to teach me how to paint some wood boards (for food photography). She came over with a serving of chicken meatball biryani, which is a specialty of northern Indian food.
Now, I have to say that I am partial to all kinds of meatballs, there is just something so irresistible about ground meat shaped into balls. Every culture has its own version of meatballs. My favorite has always been my version of pork meat balls, seasoned with Chinese 5-spice powder. But Reem’s meatballs are top notch, and I immediately fell in love with them and begged her for the recipe.

Over iPhone messages, she shared with me her recipe, and I gathered the ingredients and made them. Reem told me that the recipe is very versatile, it serves both adults and kids, and especially loved by picky toddlers. Boy, was she right? I improvised the recipe per her suggestion, added in some mashes green peas and some finely diced carrot (as pictured above), and my toddler ate all six of them in 10 minutes! That made me a very happy mom.
Now for the grown up version, I added in some cayenne pepper to spice them up and we couldn’t get enough. These chicken meatballs are THE JUICIEST meatballs I have ever tasted. The meatballs were bursting with juice as soon as I sank my teeth into them. They are moist, flavorful, with just the perfect seasonings. A few days later, I made them again. And guess what I will be making again tonight?

Shredded jicama (squeeze out the juice), chopped carrots, chopped shallots, cornstarch, sugar, white pepper and light soy sauce.
