    Ooh…I love them raw, but it’s always a leap of faith. If they aren’t right up there with the best-oysters-you-ever-head, it’s just a waste of time and all your courage! I think the best oysters I ever had were actually at a “jaulau” (dim sum restaurant) in Vancouver, Canada that specialized in new-age dim sum. (I don’t know about you, but I’ve never seen raw oysters on any other dim sum menu cards!)

    I love oysters both cooked and raw. There’s nothing like a raw oyster w/ some lemon drizzled on it or hot sauce. Fried oysters in a poboy sandwich are also amazing.

    I am a great fan of raw oysters! Best to have them with shallot & vinegar sauce (vinaigre à l'échalotte).

    The daunting side of eating raw is if they are not fresh, then, the probability to be sick is high. :(

    I prefer them raw with Tabasco and a squeeze of lemon, but I would certainly not turn down oysters that were well cooked either.

    We love them raw or cooked regardless! If I have to choose, here in Oz raw and briney straight from the oys-farms would be fav! Or at home with a squeeze of fresh lemon and dash of Tabasco. Cooked, I can’t go past Singapore-style oyster omelette (oh-chien??). Maybe you can post a recipe for it here sometime!

    Succulent grilled oysters with a splash of lemon or sprinkle of cumin are my favorites, but in the “R” months raw is great too.

    Raw, straight from Hog Island Oysters at the San Francisco Ferry Building. Oh yeah.

    Grilled, with some soy-chili-lime dressing.

    Baked, with soy-ginger-scallions.

    Fried, as in o-chien.

    oh god that looks amazing. i quite like my oysters cooked because i’m not a big hardcore oyster fan.but i once had them pizza style on an oyster farm in New Zealand — tomato sauce and mozzarella on top — it was DEEEE-lish. :)

    I like my oysters raw or cooked. But for the cooked version like in oyster omelette, the oysters have to be cooked just nice and not too dry.

    God… raw or baked, I love them just fine!!! However if there are more ways to bake them it will be great!
