Love this post.....I love Japanese cuisine and have hard time finding vegetarian options here in US. Can you suggest vegetarian but authentic replacement for dashi....which as you said, is the building block for Japanese cuisine. Also, replacement of bonito flakes used in most dishes for toppings...thanks

Very helpful overview. I haven't buy any dashi before because I wasn't sure how or how much to use it. After reading your overview, I will get a bottle the next time I go to Hmart or 99 Ranch Market. Thanks:)

Good to know that you like Mizkan rice vinegar. You should try Mizkan ponzu and soup base. I make so many wonderful dishes using the ponzu and soup base. :)

Hi Aran - thanks. The rice vinegar will also rid the fish of its foul and fishy smell. Try it!

Hi Juhuacha, thanks for your comment. You are correct. I used to stock up various brands of Japanese sauces only to use them a couple of times. I find it easier to purchase a specific brand and explore its line of products, and explore with new recipes/flavors. Yes, I will be sharing new Japanese recipes here so please stay tuned.
