I had gone completely bananas with this delicious banana bread. (Banana bread is also known as “banana cake” outside of the United States.)
I love the smell of baking, especially the smell of banana bread, so yesterday, I baked banana bread (banana cake). Previously, I baked banana nut muffins to perfume my house with the sweet aromas of bananas.
My banana bread (banana cake) was topped with sliced bananas. As a result, my banana bread looked so photogenic I had to take numerous shots of them…

Adapted from Joy of Cooking
Ingredients:
1 3/4 cups all-purpose flour
3/4 cup granulated white sugar
1 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, lightly beaten
1/2 cup unsalted butter, melted and cooled
3 ripe large bananas (approximately 1 pound), mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla extract
Garnish: (Optional)
A few slices of banana
Method:
Preheat oven to 350 degrees F. Butter and flour the bottom and sides of a 9 x 5 x 3 inch loaf pan. Set aside. In a large bowl combine the flour, sugar, baking powder, baking soda, and salt. Set aside.
In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. With a rubber spatula, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.)
Scrape batter into prepared pan and place the slices of banana on top of the batter for garnish. Bake until bread is golden brown and a cake tester inserted in the center comes out clean, about 60 minutes. Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.
Makes 1 – 9 x 5 x 3 inch loaf of banana bread / banana cake.

It is photogenic — but looks delicious, too! I can’t imagine that with all the wonderful aromas coming from your house, that your neighbors weren’t knocking on the door to invite themselves for dinner!

Oh that’s so smart–baking to get rid of the smell. It’s sounds so obvious, but I never thought to do that (I usually open all the windows and doors and maybe light a candle!)

Very nice! I never thought of laying slices of bananas on top of the loaf before, I’ll try that next time. The texture of yours also looks completely different from mine! Wow! I’ve loved banana bread ever since I was a little kid and my mom let the bananas turn brown and mushy on purpose. This banana bread certainly takes the cake (pun intended) when it comes to aesthetics!

another idea: mush up half the bananas & chop the rest into small pieces, making for both banana flavor in the bread, spiked with bits of extra tasty gooey banana throughout

Hi, i just tried this recipe…my banana cake cracked on top…the top part risen quite high and cracked the nice row of banana i have added as garnishes (just like what you did). Any advise for improvement?

I have a similar receipe like yours, instead of vanilla essence I add banana essence and I used 3 eggs. I do like the way you put the banana slices ontop. It looks great!!
