		<description><![CDATA[As a mother to a growing toddler, I am always frustrated that I can&#8217;t get real chicken nuggets at the stores. I don&#8217;t know why, but I haven&#8217;t been able to find a brand that produces chicken nuggets using unprocessed chicken meat.  If you are a mother, you probably share my frustration, as all kids love chicken nuggets and they should be eating real chicken instead of sodium-loaded-blended-chicken-meat coated with thick batter! Anyway, chicken nugget is my secret weapon whenever I run out of ideas what to feed my son, or whenever I feel lazy to cook a complete meal for him. Another thing, my picky eater always welcome a few pieces of chicken nuggets, dipping in his favorite teriyaki sauce. Here is the baked chicken nuggets recipe using real chicken. You don&#8217;t even have to deep fry the chicken nuggets as the baked version is equally tasty and not greasy. Plus, it&#8217;s something that you can whip up in about 30 minutes and you won&#8217;t feel guilty feeding your chicken store-bought &#8220;fake&#8221; chicken nuggets.  Try it and I am sure your kids will love the homemade chicken nuggets. 		<description><![CDATA[Tomorrow is Halloween and I&#8217;m sure everyone is busy and gearing up for trick or treat. Baby G is celebrating his first Halloween this year, well, I mean he is actually going to dress up this year. The last two years, he was too little to understand anything so we didn&#8217;t dress him up and he didn&#8217;t go trick or treating. But now that he is two years old, can&#8217;t stop talking and loves candies, we think it&#8217;s time for him to have some Halloween fun. He is going to be the pirate of the Neverland. His daycare has a big Halloween potluck tomorrow and everyone is going to bring a treat. I decided to bake these delicious banana cream cheese muffins for the kids in his class. I baked these muffins last week and as soon as they were out of the oven, I took a bite and decided that this is the item to bring to the party&#8230;banana plus cream cheese will be a surefire hit at the party. And perhaps Baby G will become even more popular now that the mom is out to bribe all his little friends with some really good muffins! 		<description><![CDATA[I have been baking up a storm lately and today it continues with this buttermilk cake with blackberries. Fall is such a great season to bake, as the days get colder, the heat of the oven warms up the room while the aroma fills the crisp air. And nothing beats a slice of freshly-baked cake, with a cup of tea or coffee while I read through my magazines. I also love raisin butter cake, pound cake, marble cake, and of course, everyone&#8217;s favorite madeleine. Buttermilk is a very new ingredient to me. I have never used it in my kitchen, well, until this recipe. Buttermilk is the leftover liquid after the butter is churned. However, the buttermilk we get at grocery stores is cultured buttermilk, which is made by adding a bacteria culture to low-fat milk or skim (no fat) milk. In baking, buttermilk is highly prized because it makes baked goods such as cakes moist with a creamy texture, plus it&#8217;s also low fat. In the United States, especially in the southern states, buttermilk is widely used in fried chicken as it makes the chicken extra moist and juicy. Anyway, I was very happy with my first experiment with buttermilk. This blackberry buttermilk cake turned out moist and delicious and we finished the cake in one day. It was also very easy to make. More importantly, this is another recipe that Baby G can enjoy. The blackberries pack a lot of nutrition and vitamin C that he needs. For cakes made with buttermilk, it&#8217;s best to serve it on the same day. You might keep it overnight. If the cake is left out at room temperature, it might turn moldy beyond the second day. 		<description><![CDATA[I have recently changed Baby G&#8217;s daycare schedule to full day instead of partial day, which means that he basically spends his whole day there now. (Yay to mommy as I get more &#8220;me&#8221; time to work on my blog, developing, and testing recipes). Because of that, I have started baking more because I would love for him to eat better during his afternoon snack time, instead of the typical store-bought crackers and biscuits, which are not all that nutritious. Baby G likes to eat bananas and chocolate, so I decided to combine his two favorite ingredients into a cake that he will like. I made this banana chocolate bread, which is adapted from Everyday Food magazine by Martha Stewart. I subscribe to almost all food magazines, but I always find Everyday Food very useful with practical and doable everyday recipes. More importantly, the recipes that I have tried always turn out great. This banana chocolate bread recipe yields aromatic, moist, and delicious cake. On the third day when we had the last loaf of the banana chocolate cake, it was still soft and moist, just like it was freshly baked! If you&#8217;re tired of your same old banana bread, give it an upgrade by adding some chocolate to the cake. The end result is pleasing to adults, kids, and picky toddlers. I cut these banana chocolate bread into bite-sized pieces and packed them into Baby G&#8217;s tupperware. 		<description><![CDATA[How time flies. Baby G turns two today. It was just like yesterday when he was born, so adorable and fragile. He has grown so much and he is like a little man now. In the past two years, he has given us so much laughter and sweet memories. Every night, as he falls asleep, I look at his angelic face and can&#8217;t help but smile contentedly. That&#8217;s my happiest moment each day&#8230;well, if you are a mother, I am sure you know the warm fuzzy feeling that no one else could give you, but the love for your children. Anyway. I digress. Baby G goes to a day care in the day, and he told me that he has three girlfriends at school: Sydney, Grace and Stella, and that Sydney is his favorite. Isn&#8217;t that funny? Anyway, I wanted him to celebrate his birthday with his friends there, so I made these chocolate cupcakes with ganache filling for his birthday party tomorrow. 		<description><![CDATA[Recently, I got connected with an Irvine-based food blogger Reem at Simply Reem. She is an artist so I invited her over to teach me how to paint some wood boards (for food photography). She came over with a serving of chicken meatball biryani, which is a specialty of northern Indian food. Now, I have to say that I am partial to all kinds of meatballs, there is just something so irresistible about ground meat shaped into balls. Every culture has its own version of meatballs. My favorite has always been my version of pork meat balls, seasoned with Chinese 5-spice powder. But Reem&#8217;s meatballs are top notch, and I immediately fell in love with them and begged her for the recipe. Over iPhone messages, she shared with me her recipe, and I gathered the ingredients and made them. Reem told me that the recipe is very versatile, it serves both adults and kids, and especially loved by picky toddlers. Boy, was she right? I improvised the recipe per her suggestion, added in some mashes green peas and some finely diced carrot (as pictured above), and my toddler ate all six of them in 10 minutes! That made me a very happy mom. Now for the grown up version, I added in some cayenne pepper to spice them up and we couldn&#8217;t get enough. These chicken meatballs are THE JUICIEST meatballs I have ever tasted. The meatballs were bursting with juice as soon as I sank my teeth into them. 		<description><![CDATA[I haven&#8217;t posted new baby recipes for a while but a good friend finally motivated me to do so. She has been cooking the sweet potato porridge for her daughter and can&#8217;t wait for my new baby recipes. So, here is my deluxe baby porridge recipe that I have been making for Baby G since he was 7 months old. It&#8217;s called deluxe baby porridge because I have added many nutritious and delicious ingredients to the porridge: protein (you can use chicken, ground pork, fish, or beef), dried scallop (the secret ingredient in Chinese cooking that makes food extra yummy), silver fish or baby anchovy (which is loaded with calcium), potato (sweet potato or regular Russet potato or Yukon Gold), squash (I love pumpkin, kabocha, or butternut squash), vitamin C (tomato, broccoli florets, green beans, carrots), and onion. Onion has many medicinal benefits and stimulates good appetite. I also add an egg yolk towards the end of the cooking because Baby G doesn&#8217;t like formula. Believe it or not, Baby G has been eating this same porridge for over 6 months (he is now 13 months) and he never gets bored; in fact, he eats more and more each day because he is now an active walker! This recipe is very versatile because you can change the combinations I proposed above: use a different protein every day, change your potato, squash, and vitamin C and you have many variations. For me, the silver fish, dried scallop, and onion always stay because of the great flavors they lend to the porridge. Please take note that the dried scallops are quite expensive but if you do get it, buy the small dried scallops (slightly bigger than a dime), preferably from Japan. 		<description><![CDATA[I have been feeding Baby G porridge since he was about 5 months old. He still eats porridge every day, twice daily, and he just loves it. He can finish 1 cup to 1.5 cups of porridge every meal! I started introducing porridge to him a few weeks after feeding him sweet potato puree. Knowing that he loves sweet potato, I know exactly what he wants in his porridge so my basic baby porridge is the combination of rice, sweet potato, and water. This baby porridge is very versatile. You can be very creative and replace the sweet potato with regular potato, carrot, pumpkin, kabocha (aka Japanese pumpkin), or butternut squash. If your baby has just started on solid food, you want to slowly introduce him to new ingredients so as to avoid food allergy. Start by testing one ingredient, and then move on to the next. This way, you can also find out which combination he likes the most. As Baby G doesn&#8217;t like formula, my pediatrician told me to add an egg yolk to his food after he was six months old. Please take note that some babies develop allergy reactions to egg whites so consult your doctor when to introduce eggs to your baby.  I am going to share my deluxe baby porridge recipe with you in the next post—it tastes so good that I don&#8217;t mind eating it. 		<description><![CDATA[(Note: I have cut the avocado in halves instead of length-wise because I feel that cutting it in halves minimizes the surface of the avocado exposed to air so it won&#8217;t turn brown as much. Keeping the seed will also help.) When it comes to feeding Baby G, nutrition is the most important factor that I consider. Babies need a lot of brain food, or so-called &#8220;super food&#8221; for their ever-developing brain. One super baby food is avocado, which is recommended by a renowned pediatrician Dr. William Sears. Avocado ranks #1 on his top ten list of fruits for babies because the nutritional value of avocado nutrition is excellent for a baby&#8217;s growing development&#8230; Avocado has a lot of nutrients, considering its unattractive bumpy exterior: protein, fiber, niacin, thiamin, riboflavin, folic acid, zinc, Omega 3 fatty acids, monounsaturated fat (aka &#8220;good&#8221; fat), and the list goes on. Avocado is also a fatty fruit and high in calories, hence a great fruit if your baby is under weight. It&#8217;s good for babies 6 months and above. For easy feeding, I always use a baby spoon to scrape the flesh of the avocado. It&#8217;s so convenient and most importantly, my baby loves it. To choose avocado, always look for the ones with dark green skin, which indicates the ripeness of the avocado. Many people don&#8217;t know how to open an avocado (don&#8217;t peel the skin!), so I have provided the easy step-by-step below: How to Open an Avocado (click the gallery above for the step-by-step): Cut the avocado in half, lengthwise around the seed.
