Thanks to Almost Bourdain, I recently discovered yet another beautiful blog authored by Steph, a Malaysian currently living in Sydney—Raspberri Cupcakes. As the name suggests, Raspberri Cupcakes is mostly about baking, cupcakes, and desserts, a department which I am pretty much useless. After spending several years growing up in Malaysia, there are so many fabulous Malaysian dishes that I associate with happy childhood memories. These days as I am living in Sydney, and am always excited to go back to Malaysia on holiday, or have my Mum visit and cook to me my favourite Malaysian treats. As I am a complete sweet tooth, I thought I would share a recipe of my Mum&#8217;s that I am incredibly fond of &#8211; Malaysian Banana Pancakes. Whenever we had overripe bananas in the house my Mum would mash them up and make these deliciously fragrant pancakes for breakfast. I would wait by the frying pan impatiently and eat them too quickly, burning my tongue. They&#8217;re very different to regular pancakes, small, a bit denser and a little oily thanks to the banana and coconut milk. They taste pretty great on their own, but my Mum used to serve them with fresh lemon slices and golden syrup. It was definitely one of my favourite breakfasts. Nothing beats waking up and having a feel-good breakfast that is loaded with all the nutrition one needs for the rest of the day&#8211;protein, vitamins, minerals, carbohydrates, and more. I am not a big fan of traditional pancakes; I think they are too dry and bland for my taste, plus they get soggy when it soaks up the syrup. 		<description><![CDATA[After reading Princess Journals&#8217; fried banana the other day, I knew that I just had to make some myself. While I like fried banana fritters or goreng pisang, I love kuih kodok. I do not know the best way to name kuih kodok in English, but they are basically bananas all mashed up with flour, eggs, sugar, and then deep fried. They are usually round in shape but with uneven surface, hence the name kodok, meaning toad in Malay language. If you look at my kuih kodok, they were not round in the slightest sense. Well, if anything, they were &#8220;disfigured&#8221; and came with various shapes and forms. (I like my kuih kodok slightly softer; I used lesser flour so the shapes were irregular.) In Malaysia, pisang awak (the ones with black seeds inside the flesh) is often used for kuih kodok. According to my late grandmother, pisang awak is the best banana for deep frying.
