I’ve known Terri from Hunger Hunger for many years. We connected when both of us were featured in a local Malaysian newspaper. Once in a blue moon, Terri and I would exchange emails and I even made plans to visit her in her hometown, Kota Kinabalu in Malaysian-Borneo, but the plan never panned out. One thing is for sure, Hunger Hunger continues to whet my virtual appetite with Terri’s fabulous home-cooked meals, baking recipes, her local dining experiences and travel eats. Please visit Hunger Hunger and you will be hungry for sure as Terri tempts us with her mouthwatering content and food photography. Please don’t miss out her heavenly eggless tiramisu recipe below. I am honored and delighted to guest post on Rasa Malaysia, one of the top food blogs that inspired me to start my own blog 4 years ago. I don’t know if Bee remembers it, but I wrote to her asking for photography tips and was thrilled to my toes when she replied me. One of her tips, which I stick to, is to use white tableware and if you dine at my house and find that all my tableware are white, blame it on Bee! Bee and I agreed on a tiramisu post and I took quite a while to make different versions of tiramisu (green tea, green tea with choc and classic) because Italian mascarpone cheese (pronounced “mas-car-pon-nay,” not “mas-car-pon”) is flown in only once a week by a wholesaler and the hotels get the first pick. I’ve found that only Italian mascarpone—creamy-white, less dense but silkier than clotted cream with a milky flavor that reminds me of good buffalo mozzarella—makes the best tiramisu. Tiramisu is one of the easiest desserts to make. There’s no baking (unless like me, you make your own sponge fingers...

When I was working in LA, every week my colleagues and I would go to The Farmers Market at the Grove for the Brazilian BBQ. Pampas Grill—the stall selling the BBQ—is probably one of the most popular eateries at the Farmers Market. There is always a long line of patrons lining up for the hot-off-the-grill, juicy, and scrumptious Brazilian BBQ, including the Hollywood kind. One time, the ex-husband of Courtney Cox, David Arquette and his entourage were lining behind me… While the meats served at Pampas Grill are amazingly good, I went there mostly for the Pão de Queijo, or Brazilian cheese bread—the mini cheesy puff in ball shape that is always soft but chewy, puffy, and addictive. I would load up a bunch of them to go with the meats. Lunch was always good. Earlier this year, when Elise of Simply Recipes posted her Pão de Queijo recipe, I was so excited to make it but I was pregnant then and followed a very strict diet that precluded me from eating cheese. Anyway, time flies and now that Baby G is here, I am sort of on a cheese binge these days. I finally made the Brazilian Cheese Bread. I finished all sixteen (16) of them in practically 15 minutes (!) and immediately made the second batch! They are so good that Little Teochew, my friend in Singapore, also made them.
I always admire the young and talented, especially if they also bake very well because I am such a klutz when it comes to baking. Hannah of Honey & Jam is the uber talented 19 years old from Georgia and a star in baking, food photography, blogging, and writing. Honey & Jam is one of those blogs that I just want to linger all day—a welcoming design with luscious and vivid photography, and I feel like I could smell the sweet aroma of her baked goods whenever I visit her site. She is truly gifted. Honey & Jam bakes us some vanilla cheesecake today. Please welcome Hannah of Honey & Jam to Rasa Malaysia. Now, let’s dig in to those cheesecakes! Hi Rasa Malaysia readers! I come to you today with one of my very favorite desserts, cheesecake. It’s one of those desserts that connected with so many memories for me, like the years when my little brother was totally obsessed with it, he had to have it every time we went out to eat, and usually ended up licking the plate when he finished! It’s also the dessert I bake every year for my dad’s birthday. It’s delicious, rich and creamy, and pretty easy! This is the most basic cheesecake recipe you can work with, but with a couple of touches that kick it up a bit. Firstly, start with really good ingredients, especially the cream cheese. That’s the only way you’re going to get a really fabulous cheesecake. Also, considering making your own graham crackers! It sounds like a lot of work, but it’s totally worth it. I made my own for the first time for this recipe, and it really added a lot of great flavor… What’s great about cheesecake is you can top it with pretty...

I am not done with my lobster. I told you I had three recipes to share, and I haven’t forgotten about it. As a matter of fact, I was giving you guys a break–I don’t want you to have a cholesterol attack just by visiting Rasa Malaysia. Anyway, this is the final installment of my lobster series –stir-fried lobster with butter and cheese or 芝士牛油焗龙虾. (To view my previous lobster recipes, please click here and here.) Cheese is back, and this time with butter for a sinfully delectable stir-fry lobster dish! Simply divine. Period. If you have tried this dish, I am sure you can attest to my claim that this is indeed the BEST stir-fry lobster dish, EVER… While ginger and scallion lobster and black beans lobster–which I find boring and uninspiring–are very popular in Cantonese-style restaurants in the United States, stir-fried lobster with butter and cheese (芝士牛油焗龙虾) is commonly served in Malaysia. As lobsters are extremely expensive in the region, the use of butter and cheese adds that extra “luxury” touch to this preparation. Words just fail me when it comes to describing the taste of this dish; I will leave the recipe to you so you can experience it for yourself. Other lobster recipes from Rasa Malaysia: Mango and Lobster Salad–a mangolicious and ultra-refreshing salad. A must try! Baked Lobster with Cheese–Lobster, baked with your favorite cheese topping. Mmm mmm good. (Click Page 2 for the Stir-fried Lobster with Butter and Cheese Recipe)

Just think of this as an episode of Iron Chef…the chairman says “The secret ingredient is… LOBSTER. A la cuisine!” I rush out to the aquarium frantically, catch my prey, and off I run to the “Kitchen Stadium” and start cooking. I whip up dishes upon dishes of drool worthy lobster dishes to the judges and then the chairman announces “The winner of battle lobster is Rasa Malaysia!” Audience cheer and applause! Well, that was just me day dreaming… What really happened was I got myself a gigantic 5-lb lobster over this past Labor Day weekend and created 3 dishes. All I can say is that I was totally lobster’ed out with the 5-pounder (so much so that I think I am going to stay off lobsters for a while!). Anyway, today I am going to share the first recipe–baked lobster with cheese. In my opinion, you can do no wrong with lobster and cheese in the oven. The dish was simply scrumptious and delectable. Please also check out my other lobster recipes here and here. Trust me, they are very worth checking out!
Truth be told, I am a food snob. I shun away from chain restaurants–Cheesecake Factory, nah; The Olive Garden, meh; Denny’s, are you kidding me?! So, you have it, I am a food snob. I avoid going to franchise or chain restaurants at all cost, well, unless I am starving to death or stuck in the middle of nowhere and the only restaurant in town is Applebee’s. Somehow, the notion of an evil a huge restaurant empire scares me. I am afraid they are going to take over the world and infest the dining scenes with the likes of Planet Hollywood (are they still in business?) and Rainforest Cafe. I yearn for pure culinary originality and I champion epicurean creativity. Dining out is one of the most enjoyable and best things in the world, so a restaurant should be unique, possesses lots of character, and has its own identitity (no cookie-cutter decor and menu, please!). However, I have to admit that there is an exception. I go to Red Lobster, occasionally. As a seafood connoisseur, you must think that I go there for seafood, but no, I go there for the sole reason of stuffing myself silly with their biscuits. Yep, you heard it right–those fluffy-cheesy-buttery-garlicky-fresh-off-the-oven world famous Red Lobster biscuits. (Red Lobster serves almost 1.1 million of their Cheddar Bay Biscuits every day.) You have the statistics, they are spectacular… Wait a minute, didn’t I just proclaim that I don’t do chain restaurants? I can’t lose my integrity (and reputation), but I am nuts for Red Lobster biscuits. What to do? What to do? I made them, well, after hours of Googling for the secret recipe on the internet. I don’t think I got the real secret recipe for Red Lobster Cheddar Bay biscuits, but they were not bad....
