Let’s talk about your favorite summer seafood meals. For me, it’s simple peel and eat shrimp, lemongrass and Sriracha grilled shrimp or beer-steamed mussels and of course a cool starter like lobster and mango salad. What about all those extra hot dog buns left over from 4th of July? I’m thinking lobster salad again. Nothing fancy, just delicious chunks of chilled poached lobster meat stuffed in a bun with mayo and a little light seasoning. How about Rasa Malaysia’s version of the famous Classic New England Lobster Roll? I may not have the special buns for this classic, but with fresh live lobsters and cooking it right, you’ll definitely get a perfect lobster roll for sure. I made a slight twist using Old Bay Seasoning and a tad butter to poach the lobster as opposed to simple poaching/boiling with only salt water like what it’s usually done for the famous New England Classic Lobster Roll. That, plus I don’t have those special buns for it and don’t know where to get it. All and all, the end result is still worth every penny, I’m happy and I can assure you when lobster’s on sale again, I’ll definitely make more of these delicious lobster roll!
(Chinese recipes, prepare authentic Chinese food now!) Recently, my neighborhood Asian grocery store had a lobster sale. At $6.99/lb, it was a steal that I couldn’t pass up, so I got myself a 3-lb Boston lobster. When it comes to lobsters, there aren’t that many recipes that I know of. (Previously, I had stir-fried and baked lobster with cheese and butter and also a mango and lobster salad.) In my opinion, lobster is one of those ingredients that is very delicious but not very versatile… In the Chinese restaurants in the United States, lobsters are often served with Yee Mein (or “E-Fu” noodles). First, the lobster is stir-fried with ginger and scallion, and then poured over a bed of boiled Yee Mein. Lobster Yee Mein is a celebrated dish that graces wedding dinners, birthday banquets or casual dining. And that was exactly what I made. The lobster yee mein was very yummy and the taste was close to restaurant quality, but it lacked wok hei (the “breath of wok“). Cooking a big lobster at home was challenging–the wok could hardly contain the giant claws, but I managed. This coming holidays, why don’t you try out my lobster noodles recipe? Enjoy!
I am not done with my lobster. I told you I had three recipes to share, and I haven’t forgotten about it. As a matter of fact, I was giving you guys a break–I don’t want you to have a cholesterol attack just by visiting Rasa Malaysia. Anyway, this is the final installment of my lobster series –stir-fried lobster with butter and cheese or 芝士牛油焗龙虾. (To view my previous lobster recipes, please click here and here.) Cheese is back, and this time with butter for a sinfully delectable stir-fry lobster dish! Simply divine. Period. If you have tried this dish, I am sure you can attest to my claim that this is indeed the BEST stir-fry lobster dish, EVER… While ginger and scallion lobster and black beans lobster–which I find boring and uninspiring–are very popular in Cantonese-style restaurants in the United States, stir-fried lobster with butter and cheese (芝士牛油焗龙虾) is commonly served in Malaysia. As lobsters are extremely expensive in the region, the use of butter and cheese adds that extra “luxury” touch to this preparation. Words just fail me when it comes to describing the taste of this dish; I will leave the recipe to you so you can experience it for yourself. Other lobster recipes from Rasa Malaysia: Mango and Lobster Salad–a mangolicious and ultra-refreshing salad. A must try! Baked Lobster with Cheese–Lobster, baked with your favorite cheese topping. Mmm mmm good. (Click Page 2 for the Stir-fried Lobster with Butter and Cheese Recipe)
