Last weekend, I got a box of fresh blackberries from Costco and baked a batch of these beautiful looking blackberry muffins. Blackberry is a great source of antioxidant&#8211;in fact, the highest of all accordingly to this article—meaning you&#8217;re more likely to stay younger, healthier, and live longer with lots of blackberries. Sounds good to me. After many attempts in baking muffins, I&#8217;ve gotten pretty good at it, so much so that I no longer need to refer to my muffin recipes for these blackberry muffins. If you love muffins&#8211;which most people do&#8211;you can try my blueberry muffins, raspberry muffins, and banana nut muffins recipes. 		<description><![CDATA[On my recent flight back from Asia, I read a very interesting article about 10 superfoods that one should integrate into the daily diet: garlic, tofu, mushrooms, blueberries, kale, flaxseed, beans, carrots, tomatoes, and strawberries. These foods are referred to as &#8220;immune boosters&#8221; by the author, a MD and medical director of a cancer treatment center. Earlier this year, I had a major health scare&#8211;one that was fortunately harmless&#8211;that leads me to be more conscious about the foods I consume on a daily basis. When I read through the list, I felt rather happy and relieved because I am already a big fan of many of them; for example: garlic, tofu, mushrooms, carrots, and beans. However, I don&#8217;t eat enough blueberries and strawberries, even though they are so adorable, absolutely edible, and readily available in the US. I resolve to eat them more. And hence, blueberry has become my new favorite. I eat them raw, or I top my matcha (green tea) ice cream with blueberries (green tea is also another healthy food). I also bake blueberry muffins on the weekend, and save the muffins as breakfast for my busy work week. Packed full of juicy blueberries, these sweet and light muffins are perfect choice for breakfast. I have a great blueberry muffins recipe that I received in my mail, you know, the cookbook club mailer that also includes a few recipe leaflets. The blueberry muffins recipe calls for very basic ingredients&#8211;ones that I always have in my fridge and pantry. The recipe also creates a fluffier muffins instead of the &#8220;dense&#8221; ones sold at stores. Personally, I love my blueberry muffins &#8220;lighter&#8221; as I can have a couple of them without feeling completely stuffed in the morning. 		<description><![CDATA[There is something very comforting about baking on a Sunday afternoon. First of all, the smell of baking perfumes my whole house with sweet and buttery aromas; secondly, there is no better way to beat my Monday blues than with homemade baked goods and start off the busy work week on the right foot. So, that was exactly what I did this past Sunday afternoon&#8211;making these cute-looking mini raspberry muffins. I don&#8217;t like my muffins big because I could never finish the whole thing and always end up wasting the food. When it comes to baking, I love everything mini&#8211;mini egg tarts, mini tartlets, mini cupcakes, etc. (My obsession with small baked goods also explains my petit fours fetish in Paris recently.) I always opt for a light breakfast in the morning so mini muffins fit my bill. I personally love my raspberry muffins pictures very much. I usually shoot with an Aperture of 3.2-3.5, but today, I experimented with a much lower setting. All these pictures were shot with an Aperture of 1.8-2.2; I thought they look great and somewhat dreamy.
