For Chinese in Malaysia and Singapore, and those who live overseas, this time of year means one thing: baking time for the upcoming Lunar New Year. As the year of Snake is just barely two weeks away, every household is busy prepping for the upcoming new year. Spring cleaning, shopping for Chinese New Year&#8216;s foods and goodies for friends, families, and clients, buying new clothes and shoes, and most definitely, making batches of batches pineapple tarts, peanut cookies, kuih bangkit, and more. Everywhere you go, you will see vendors, shops, hawkers selling their Chinese New Year cakes, and one of the most popular items is pineapple tarts. On Rasa Malaysia, I have shared a couple of recipes here and here, but this year, I have decided to ask my contributor Ho Siew Loon to share a Taiwanese pineapple tarts/shortcakes recipe, which is no less tasty than the regular ones. Personally, I prefer Taiwanese pineapple tarts/shortcakes, or 凤梨酥, which is a must-buy whenever I go to Taiwan, or Taiwanese-style bakeries. They are rectangles or squares in shape, rich, crumbly, buttery, and filled with a decadent filling. I just can&#8217;t stop eating them, and they are especially great with tea. This Chinese New Year, perhaps you can try making these Taiwanese pineapple tarts. I am very sure you will love them. 		<description><![CDATA[Chinese invented fried rice but I think it&#8217;s the genius of the Thais that make fried rice sinfully delicious—they concocted pineapple fried rice. With the addition of fresh pineapple, flavored with shrimp paste, fish sauce, and comes in a hollowed out pineapple, pineapple fried rice is the only fried rice I really wanted to eat. Not only does it look visually appealing, the taste is simply mouthwatering and utterly appetizing. My gallery above speaks for itself. This pineapple fried rice was prepared by my second sister, who is currently in town. We had some leftover pineapple from our Nyonya salted fish curry and she suggested pineapple fried rice for lunch. She carved out the pineapple flesh and cut them into small pieces. Then, she fired up the wok and fried up a batch of pineapple fried rice. The tempting good smell set my stomach rumbling; needless to say, lunch was absolutely delightful. Do try out this pineapple fried rice recipe. If you don&#8217;t have fresh pineapple, canned ones would do, but nothing beats biting into the sweet, juicy, and slightly tangy pineapple that bursts with freshness and flavors. Another fried rice that is seriously delectable is Malaysian belacan (prawn paste) fried rice but I will have to share the recipe with you in the future. 		<description><![CDATA[Since my last post on pineapple tarts, I&#8217;ve received a few emails asking me about the pineapple jam or pineapple tarts filling&#8211;how it looks, the texture, the inside of the pineapple tarts&#8211;and I thought I would share this picture of pineapple jam/pineapple jam with you. A perfect pineapple jam or pineapple tarts filling should be golden brown in color, with a sticky texture. The golden hue comes from the sugar added during the cooking process. Last night, I made another two trays of pineapple tarts and converted them into pineapple shortcakes by adding 1 tablespoon of vegetable shortening. Oh my, what a phenomenal improvement&#8211;the pastry was soooooo crumbly it practically melted in my mouth. Needless to say, I finished all of them, again! After 3 days of eating organic greens, tofu, fruits, and soups, I developed a critical craving for carb and sugar—I needed a kick to my bland palate, I needed something loaded with carb, hopefully sweet and sinfully buttery. Then, I thought about the various pineapple tarts recipes that I have been saving for months. What a brilliant idea! Pineapple tarts have gotten everything that I was craving for: carb, check; pineapples, mmmm yum; sugar, oh yeah; butter, hell yeah! And hence, two trays of buttery, sweet, flaky, delicious, and beautiful pineapple tarts were born in my kitchen. Thanks to my Malaysian friend Mandy at Fresh from the Oven, I couldn&#8217;t get enough of them, and I am definitely saving her recipe for good&#8230; Pineapple tarts (凤梨酥/菠萝酥) are commonly baked for the celebration of Chinese New Year festival in Malaysia and Singapore. In Taiwan, pineapple tarts or 凤梨酥 are exceedingly popular but their pineapple tarts recipe calls for shortening and milk powder and taste slightly different. Because shortening is used in the Taiwanese version, they are also called pineapple shortcakes. Making these pineapple tarts (凤梨酥/菠萝酥) takes some patience, especially with the pineapple jam or pineapple tarts filling.
