Growing up in Malaysia, I was exposed to Indian cuisine since I was little. Both my late parents loved Indian food…their favorite food in the world was nasi kandar, or Indian rice plates made popular by Indian-Muslim in Penang. At home, my mother loved cooking Indian curry: chicken curry, Indian squid curry, or seafood curry. Everyone in the family enjoys a good pot of fiery hot and spice-laden curry; as the smell and aroma of Indian curry wafting out of the kitchen, we knew that lunch and dinner would be excellent. I also love Indian flat breads, such as naan and roti canai. My father would always pack a slice or two of sweet roti canai for me as a snack or late night supper. Indian food was a staple in our family, and Indian food is also the ultimate favorite for Mr. Rasa Malaysia. Even though I grew up with Indian food and surrounded by people who love it, I am not an experienced cook when it comes to Indian cuisine. I will be very honest, I still get fennel seeds and cumin seeds mixed up sometimes as they look so similar (in my eyes). So when Shubhra Ramineni, the author of Entice with Spice contacted me, I was excited to check out the cookbook. This Cardamom Chicken or Masala Murgh picture and recipe caught my eyes when I read through the book. This is the kind of chicken my parents and I would order at our favorite nasi kandar restaurant in Penang: bright red-orange chicken cooked to tender perfection in a blend of spices. I can almost smell the aroma and savor the flavor of the cardamom chicken from the picture, and I have no doubt that it is tantalizing in taste. If you wish to check out the...

Every summer, when I host BBQ parties, I would always have satay for my guests. My favorite is chicken satay. It’s hard not to fall in love with satay—skewered of marinated meat (chicken or beef) grilled over fire, and then served with a savory peanut dipping sauce. The combination is just brilliant. While I make Malaysian-style satay most of the time, for examples: chicken satay and beef satay, I also love a good Thai chicken sate, which is marinated with coconut milk and fish sauce, two key ingredients in Thai recipes. Unlike its Malaysian counterpart, Thai sate tastes milder and less complex in taste (in my opinion), but delicious nonetheless. This is my Thai chicken sate with peanut sauce recipe, adapted from a cookbook. Try it out and I am sure you (and your guests) would absolutely welcome a skewer or two, or three freshly grilled sate with the creamy peanut sauce.
I’ll be very honest. I’m quite possibly the worst baker in the whole world. I can’t follow baking instructions, no patience, always too hungry and can’t wait for hours to devour the baked goods, and that’s why I hardly attempt to bake. But recently, I’ve started to have a second thought about baking, thanks to my shiny new double oven gas range from KitchenAid which inspires and motivates to learn baking every time I set my eyes on the ovens. So this past week, I asked my friend A to come bake with me. We decided to make an Asian-style pizza and came up with the idea of Chicken Tikka Masala Pizza. Chicken Tikka Masala (check out the recipe by What’s for Lunch Honey) is a delicious Indian recipe and makes a killer topping for the pizza. The exotic tastes of the spices and the chicken paired beautifully with the cheesy pizza. It was scrumptious and we couldn’t stop eating it. Here is my Chicken Tikka Masala Pizza recipe, using a store-bought pizza crust. The ingredients list is lengthy and the method is long, but I assure you that the end result is rewarding.
Every summer, I make sure that I go to the beach as much as I can and dine in at the many seafood restaurants or seafood shacks along the beach. Some of my favorite places to eat are the fun and casual seafood restaurants at Newport Beach, Huntington Beach, and Redondo Beach. Even though the restaurants here are not quite a “shack” like the ones in New England, they serve pretty decent seafood and shellfish that basically scream summer. My favorite dishes are steamer clams, crab cakes, and peel and eat shrimp. Nothing delights me better than having a meal of fresh seafood, sipping down cold drinks, and have fun conversations with my company while soaking up the sun and warmth. Last year, when my eldest sister came to visit, I took her to one of the seafood restaurants at Santa Monica. I ordered a big bucket of peel and eat shrimp, and we just sat there, peeling and eating. The experience was uniquely American to my eldest sister and she really enjoyed the food. The memory from last summer prompted me to share this peel and eat shrimp recipe, which I plan to make for my guests when I have my summer party next weekend. It’s going to be fun, and I know everyone could always have some peel and eat shrimp, cold beer, and great conversations during summertime. So lay out the brown paper, fill the buckets with the sea bounty, and dig in. Enjoy and don’t forget to check out my summer recipes!
As you might have guessed, my favorite region in the whole world is Asia. And of all Asia, my favorite island is Penang, my hometown, and my second favorite is Bali, Indonesia. I love Bali—its lush green fields, Hindu temples, rolling highlands, sandy beaches, rich culture, and friendly people. I’ve been there a few times and wish to learn more about its cuisine. I’m so happy to come across Cooking Tackle, an Indonesian food blog by Ira, based in Bali. Cooking Tackle is a visual eye candy. I absolutely love the exotic recipes and mouthwatering food photography. The blog is simply delicious! Please welcome Cooking Tackle and Ira to Rasa Malaysia, with a traditional Balinese chicken, or ayam pelalah recipe. Although the sky for the most part is grey here in Bali recently, it doesn’t mean that I’m lack of motivation. In fact, cooking has always been an enjoyable experience, so you could imagine how excited I was when I received an email from Bee, inviting me to be a guest writer on Rasa Malaysia. We discussed the recipe via email and I proposed a Balinese recipe to showcase Balinese cuisine to Rasa Malaysia readers. I was very happy that both Bee and I liked the idea. To be honest, I take this guest post as the perfect opportunity to share my passion for Balinese cooking with the many readers on Rasa Malaysia, especially to those who are not familiar with Bali and its interesting cuisine. I’d like to thank Bee for the honor to be here. I feel privileged to be able to share my humble recipe here. Let me introduce myself: My name is Ira, an Indonesian woman who lives in the island of the God, the island of a thousand temples—Bali. Bali is genuinely beautiful; it’s a...
