I am thrilled to be a part of KitchenAid Cook for the Cure campaign to celebrate this year’s Mother’s Day, which falls on May 12th. More than a decade after introducing its first pink product to help raise funds and awareness for the fight against breast cancer, KitchenAid is celebrating a major milestone: more than $9 million raised to date through its Cook for the Cure® program benefiting Susan G. Komen for the Cure. And in 2013, KitchenAid will donate $450,000 or more to Susan G. Komen® through the Cook for the Cure® program to support the fight against breast cancer. This year, I have decided to attempt a cookie recipe that is sure to bring the sweetest smile on your mother’s face—chocolate chip meringue cookies. Perhaps it’s the white exterior, and its airy, pure and light texture, meringue cookie just screams love and endearment to me…I couldn’t think of a better recipe for the upcoming Mother’s Day. I had thought of adding some pink color to the meringue cookies but I finally settled with chocolate chips. How can we do without chocolate on the special Mother’s Day? I just simply loved the creation, and I hope you get to try this chocolate chip meringue cookie recipe and make a big batch for your mother, grandmother, or for yourself. Now that I am a mother, I know that every mother deserves a very special gift this year, and a very special recipe to brighten up the day, because we are worth it! If you are still shopping for a gift for Mother’s Day, do check out the exciting Pink products on KitchenAid. In addition to its highly popular collection of products offered in soft pink and Raspberry Ice, KitchenAid is now offering a new suite of countertop appliances in a new shade, Cranberry.
First, I wanted to start by saying that these glazed lemon-ginger scones were really amazing and I had four of them right out of the oven, and the next morning, I ate more! Ginger has always been my favorite ingredient. I always have some ginger in my kitchen. In Asian cooking, especially Chinese, ginger is indispensable and used in many stir-fry’s, stews and soups. According to the Chinese, ginger promises many medicinal benefits, for example: anti-inflammatory, blood circulation, digestion, and even cancer fighting benefits. Anyway, the idea of having ginger in scones is very remote to me, until I saw this glazed lemon-ginger scones recipe on the Food & Wine magazine that uses candied ginger. I was intrigued by the idea and so I made these, with great success. If you don’t like too much sugar on your scones, you can skip the glazed and they still taste great.
December is a happy month. It is a month about baking really outstanding cookies for the upcoming holiday season; it is also a month filled with holiday parties, great friends, and family. So this month, I am sharing a few of my favorite cookies recipes as well as party foods with you. When I decided to make thumbprint cookies, I knew that I had to buy an excellent jam. After all, thumbprint cookies are precisely butter cookies filled with jam. Being a jam novice, I turned to my friend Chez Pim—food blogger extraordinaire turned award-winning jam maker. Pim recommended her Fetching Framboise Raspberry Jam. Oh boy, all the hype is true…Chez Pim’s jam is the best jam I have ever tasted. (Her celeb devotees includes Nigella Lawson, Anthony Bourdain, Ruth Reichl, and many more!) The Fetching Framboise made an excellent filling for the thumbprint cookies. I love the fresh taste of the berries (yes, you can taste the freshness even though they had been made into a jam), the slight tartness, with just the perfect balance of sweetness, and the aroma…oh, the aroma and fragrance of the berries. It was so good even the picky Baby G loved it on his toast. Anyway, thumbprint cookie is a holiday classic so if you are making them this year, you can try out my recipe below.
Tomorrow is Halloween and I’m sure everyone is busy and gearing up for trick or treat. Baby G is celebrating his first Halloween this year, well, I mean he is actually going to dress up this year. The last two years, he was too little to understand anything so we didn’t dress him up and he didn’t go trick or treating. But now that he is two years old, can’t stop talking and loves candies, we think it’s time for him to have some Halloween fun. He is going to be the pirate of the Neverland. His daycare has a big Halloween potluck tomorrow and everyone is going to bring a treat. I decided to bake these delicious banana cream cheese muffins for the kids in his class. I baked these muffins last week and as soon as they were out of the oven, I took a bite and decided that this is the item to bring to the party…banana plus cream cheese will be a surefire hit at the party. And perhaps Baby G will become even more popular now that the mom is out to bribe all his little friends with some really good muffins! These banana cream cheese muffin recipe is adapted from Baked Bree, whom I met earlier this month (I also met with Gina at Skinny Taste ). When I first spotted the recipe on Baked Bree, I immediately saved it. I know most people love banana nut muffin but imagine your regular version with cream cheese…they are the best combinations ever. I have just baked these banana cream cheese muffins again for tomorrow’s party and I am seriously having trouble not to eat them. They smell too good and tempting! In any case, this is a recipe that you should totally try out if...

I have recently changed Baby G’s daycare schedule to full day instead of partial day, which means that he basically spends his whole day there now. (Yay to mommy as I get more “me” time to work on my blog, developing, and testing recipes). Because of that, I have started baking more because I would love for him to eat better during his afternoon snack time, instead of the typical store-bought crackers and biscuits, which are not all that nutritious. Baby G likes to eat bananas and chocolate, so I decided to combine his two favorite ingredients into a cake that he will like. I made this banana chocolate bread, which is adapted from Everyday Food magazine by Martha Stewart. I subscribe to almost all food magazines, but I always find Everyday Food very useful with practical and doable everyday recipes. More importantly, the recipes that I have tried always turn out great. This banana chocolate bread recipe yields aromatic, moist, and delicious cake. On the third day when we had the last loaf of the banana chocolate cake, it was still soft and moist, just like it was freshly baked! If you’re tired of your same old banana bread, give it an upgrade by adding some chocolate to the cake. The end result is pleasing to adults, kids, and picky toddlers. I cut these banana chocolate bread into bite-sized pieces and packed them into Baby G’s tupperware. It makes me feel happy because I know that he will be eating well during snack time and continue to grow.
After I published the “How to Make Soy Milk” post, many readers asked me to share the Chinese sweet tofu pudding or doufu hua (豆腐花) recipe. I will be honest, I have never made doufu hua before, as I always think of it as something very hard to do, tedious and mostly fail-prone. Oh boy, was I wrong? Now that I have made my own homemade tofu pudding, it just dawns to me why have I waited so long to try something that is so easy—and rewarding—to make! I grew up eating a lot of doufu hua, which is a very common and popular sweet dessert in Penang, Malaysia. Walk down any streets or markets, one can always find soy milk hawkers (street vendors) selling both soy milk and doufu hua, freshly made each day. There are also hawkers who cycle their mobile stall or cart around the neighborhood, hawking “doufu hua” loudly as they peddle down the street. Both soy milk and doufu hua are excellent for the scorching hot and humid weather back home. They are my absolute favorite. Making it at home for the first time, I did face some challenges. I consulted my friend Andrea Nguyen, author of Asian Tofu, who gave me precious tips and tricks to make the best tofu pudding at home. Her pointers are extremely useful, and they can be found at the Cook’s Notes section in the recipe. Simply put, to make really good tofu pudding at home, you need a good master soy milk, which is a richer soy milk. According to Andrea, store-bought soy milk is usually thinner compared to homemade soy milk, and not the best for tofu pudding. So if you want to make the best doufu hua, you have to make soy milk. The recipe and...

How time flies. Baby G turns two today. It was just like yesterday when he was born, so adorable and fragile. He has grown so much and he is like a little man now. In the past two years, he has given us so much laughter and sweet memories. Every night, as he falls asleep, I look at his angelic face and can’t help but smile contentedly. That’s my happiest moment each day…well, if you are a mother, I am sure you know the warm fuzzy feeling that no one else could give you, but the love for your children. Anyway. I digress. Baby G goes to a day care in the day, and he told me that he has three girlfriends at school: Sydney, Grace and Stella, and that Sydney is his favorite. Isn’t that funny? Anyway, I wanted him to celebrate his birthday with his friends there, so I made these chocolate cupcakes with ganache filling for his birthday party tomorrow. All kids love chocolate, and with frosting and sprinkles, I am sure all the kids would love these cupcakes. And I already know that he is going to score big with his three “girlfriends.” Haha. Happy birthday my little prince. You will always be my little baby!
Once in a while, I have sudden cravings for kuih, or Malaysian sweet cake, which is a delicacy found in Malaysia. I usually crave for onde-onde and kuih bingka ubi (cassava cake). However, making kuih is laborious and takes a long time, and I have no patience to make these two cakes to fix my cravings, so I usually combine two recipes into one and make cassava cake with shredded coconut. The cassava cake looks just like kuih sago, but it’s made with cassava instead of sago pearls or tapioca pearls. Back home in Malaysia, whenever there is festive season, for example: Hari Raya (Aidilfitri), Malay or Peranakan weddings, various kinds of kuih are served to the guests. I grew up with my late grandmother who was a legendary kuih maker. Every wedding or festive celebration in my family was graced with endless array of colorful kuih, all cut into nice little bite-shaped shapes waiting to be devoured. Ironically, I didn’t appreciate kuih when I was back home in Malaysia. I was into western-style baking: cakes, cookies, buns and donuts. I thought kuih was unfashionable; little did I know that kuih were such an art form and unique creations of my culture. Anyway, now that I realized how delectable and dainty these kuih are, I enjoy eating them whenever I have a chance. These cassava cake with shredded coconut is absolutely delightful and lovely, both to the eyes and the taste buds.
When it comes to baking, I like really simple recipes that are almost fail-proof, yet deliver satisfactory results. Recipes that call for only a few basic baking ingredients, precisely, butter, flour, eggs, and sugar, that create magic when blended together and baked. One example is pound cake. I spotted this perfect pound cake recipe a while ago on Kokken. Seriously, I have never seen such a perfect looking pound cake on the internet; I immediately bookmarked the recipe, which is from “The Cake Book” by Tish Boyle. I could always use a slice (or two or three) of pound cake. I never tire of rich and buttery cake. Now that I have tried this perfect pound cake recipe, I have to say that even though the pound cake is really good, I still think that this butter cake recipe I learned from Food-4Tots is slightly better. The two recipes are very similar, but the butter cake recipe is richer with more butter, which I love. Plus, I actually didn’t fancy the addition of grated orange and lemon zest in this pound cake recipe. In any case, if you love a good pound cake, this recipe is definitely a keeper.
I’ve been baking quite a bit lately, thanks to my new KitchenAid 7-Quart Stand Mixer (enter to win here) that my friend at KithenAid sent me. This past weekend, I baked a batch of spritz cookies using my favorite cookie recipe, and they were gone in no time. (Spritz cookies are basically butter cookies made with a cookie press.) These spritz cookies are beautiful, festive (with holiday-themed sprinkles), but more importantly, they are buttery, melt-in-your-mouth crumbly, and absolutely addictive. I got the original recipe from the packaging of a cookie cutter I bought in Malaysia and adapted the recipe to fit my taste. The recipe yields the BEST homemade cookies ever! To make the spritz cookies, I used a cookie press and chose the Christmas tree pattern. Everyone who has tasted these cookies can’t stop raving about them, some even told me to start selling these cookies! Try this spritz cookies recipe and I’m sure you’ll love them. Happy baking! (Click Page 2 for the Spritz Cookies Recipe)
