Lemon butter chicken is one of the easiest and complete meal you can make for your family, especially on those busy weeknights. The recipe is wholesome, with juicy chicken, a creamy sauce, with healthy spinach and tomatoes. Plus, it’s so easy to make and takes only 20 minutes.

For the chicken, I used boneless and skinless chicken thighs, but you can use chicken breasts, bone-in chicken thighs. It’s very flexible. First you pan-seared and cook the chicken to a nice golden brown and crisp up the surface, then you make the creamy sauce.

The spinach and tomatoes will go in last so you don’t overcook them. I made a big pot of plain spaghetti (you can use penne or rotini), ladle the sauce and chicken over the spaghetti, and dinner is served. This Lemon Butter Chicken is so delicious and satisfying, it’s something I will make over and over again!

    Really good flavor but could have been a bit thicker. I probably should have simmered the sauce longer before adding back the chicken and other parts. My husband was fine with it as it is and wants this again, maybe with shrimp instead of chicken!

    Hi Bee. I would love to attempt this and I know it says heavy whipping cream.. does that mean whipping cream or thickened cream? Are they the same? Just that the stores where I am don’t seem to have heavy whipping cream but regular whipping cream so I am a bit confuse. Thanks!!

      There are two types of whipping cream – heavy or regular. You can just use whipping cream.

    Hi Bee. Would love to try out this recipe sounds absolutely delicious..Can i replace the chicken broth with anything else or will it affect the outcome if i dont use it at all? A little confused..thanks ?

      Yeah, chicken broth makes the sauce better. You can use water but it won’t have much taste.
