- Use a hand mixer or stand mixer to make the cake batter.
- To avoid over browning of the top of the cake, cover it halfway while baking with a sheet of aluminum foil. DO NOT COVER when the cake goes into the oven or it won’t rise properly.
Does Butter Cake Need to be Refrigerated?
No, you don’t have to refrigerate the cake. They are best served warm, or at room temperature. If you have leftovers, you can wrap it up with aluminum foil or plastic wrap to keep them from drying out.
You can keep them for up to 3 days. To serve the leftover, you can then warm them up in the microwave (for a few seconds) or toaster oven before eating the leftover.

Butter Cake Recipe
Butter Cake - the best butter cake recipe you'll find online. This fail-proof recipe yields sweet, buttery and rich cake that goes well with a cup of coffee or tea.
- 2 sticks unsalted butter, at room temperature (225g)
- 7 oz all purpose flour (200g or scant 1 1/2 cups)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 7 oz sugar (200g or 1 cup)
- 4 large eggs
- 4 tablespoons whole milk or plain yogurt
- 1 teaspoon vanilla essence
Preheat the oven to 375°F (190°C).
Lightly grease the pan (loaf pan, mini loaf pan, 8x8 or 9x9) with some butter. Mix the flour and the baking powder together and sieve. Add in the salt and mix well. Set aside.
Use an electronic hand mixer or stand mixer to beat the butter and sugar until well combined or pale yellow in color. Add in the first egg. Beat well after each addition of egg until creamy. Scrape down the sides for even mixing. Add in the vanilla essence and mix well. Fold in the flour and mix well. Add in the whole milk or plain yogurt.
Pour the batter into the greased baking pan. Shake it lightly to distribute the cake batter evenly. Bake until golden brown and cooked, about 40 - 50 minutes. Use a cake tester to test if it's cooked.
Remove it from the oven and let cool on the wire rack for 5 minutes. Cut into pieces and serve warm.
Depending on the oven, it may take more than 40 minutes to bake the cake. To prevent the top of the cake from browning too fast, cover the top of the baking pan with a sheet of aluminum foil.
