Easy and quick Earl Grey Icebox Cookies are buttery, crumbly and tasty, amazing with a floral tea flavor. These delicious cookies are the best to enjoy at any time.

Ingredients

– 1 stick unsalted butter, softened – 1/2 cup confectioners sugar – 1 egg yolk – 1 1/4 cup all-purpose flour – 1 tablespoon 1 tea bag earl grey tea leaves – 2 tablespoons granulated sugar optional

Step 1

In a large mixing bowl, cream butter and sugar until smooth with a hand mixer (or a stand mixer with a whip attachment).

Step 2

Beat in egg yolk until well combined. In a separate bowl, whisk well all-purpose flour and earl grey tea. Gradually add the dry ingredients to the wet ingredients and mix until well combined with a silicon spatula.

Step 3

Transfer the dough onto a sheet of parchment paper (or waxed paper) and shape it into a log. Roll tightly in the parchment paper and refrigerate for at least 2 hours, or overnight.

Step 4

Preheat the oven to 320°F (160°C). Remove the dough from the refrigerator. Spread granulated sugar on a piece of parchment paper and roll the dough over the sugar to coat evenly. Slice the dough into thin rounds, about 1/4 inch thick.

Step 5

Place the rounds on a baking sheet lined with parchment paper and bake for 13 to 15 minutes until the edges are slightly browned.

Step 6

Allow the cookies to cool a little bit on the baking sheet, then transfer them onto a wire rack and cool completely.
