Ingredients

– 1 cucumber (cut into bite-size pieces ) – ▢1 red bell pepper (cut into small pieces ) – ▢1 yellow bell pepper (cut into small pieces ) – ▢1 cup cherry tomatoes (cut into half) – ▢1/2 red onion (thinly sliced ) – ▢1/2 cup cubed feta cheese Vinaigrette – ▢2 cloves garlic (minced) – ▢1 teaspoon dried oregano – ▢1/2 teaspoon Dijon mustard – ▢1/4 cup red wine vinegar – ▢1 teaspoon salt – ▢1/2 teaspoon ground black pepper – ▢1/2 cup olive oil

Step 1

– Add cucumber, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion to a large mixing bowl.

Step 2

– In a small bowl, combine minced garlic, dried oregano, Dijon mustard, red wine vinegar, salt, ground black pepper and olive oil. Whisk well.

Step 3

– Pour the vinaigrette over the vegetables, and toss well with a spoon and fork. Topped with feta cheese. Let the salad set for 10 minutes allow the flavors to blend, then serve.
