Ingredients

– 4 oz shrimp (peeled and deveined ) – ▢2 Tomatoes (cut into small pieces ) – ▢1 cucumber (cut into small pieces ) – ▢1 stall scallion (finely sliced ) Salad Dressing – ▢1 clove garlic (minced ) – ▢2 tabelspoons ketchup – ▢1 teaspoon sugar – ▢2 teaspoons olive oil

Step 1

– Fill a saucepan with water and bring it to a boil. Add the shrimp and cook for 1 minute until they turn pink and are cooked through. Drain out the shrimp and set them aside.

Step 2

– Next, prepare the dressing by combining minced garlic, ketchup, sugar, and olive oil in a small bowl. Whisk well to make sure the sugar is completely dissolved, and set aside.

Step 3

– In a salad bowl, add shrimp, tomato, cucumber, and dressing. Toss to blend well. Transfer the salad to a plate and serve immediately with scallion on top.
