Ingredients

  • 4 tablespoons melted unsalted butter
  • 1 tablespoon maple syrup
  • 1 tablespoon brown sugar
  • 1 teaspoon Argo® corn starch
  • 1 tablespoon lemon juice
  • 1 ½ lbs (750g) sweet potatoes, peeled and cut into bite-sized pieces
  • 1/3 cup pecan halves

Instructions

  • Pre-heat oven to 350°F (176°C). Spray an 11 x 7-inch (28x18cm) baking dish with cooking spray.
  • Combine the butter, maple syrup, brown sugar and corn starch in a small saucepan. Stir in the lemon juice.
  • Transfer the sweet potatoes to the baking dish, stir in the glaze. Mix well. Cover with foil.
  • Bake for 30 minutes. Remove foil, stir and top the sweet potatoes with pecan. Continue to bake for 15 to 25 minutes or until sweet potatoes are tender.
