Ingredient A:
- 2 1/4 cup mixed fruits I used 250 g (1½ cups) only
- 5 oz (142g) hot tea use 1 tea bag
- 1/2 cup soft brown sugar
Ingredient B:
- 2 eggs lightly beaten
- 2 cups self-raising flour sifted
- 1/2 cup butter melted
- 1/2 cup almonds toasted and coarsely chopped
Mix ingredient A and let it soak overnight.
Preheat the oven to 160°C (320°F). Mix the beaten eggs with the melted butter, then add mixture A and the chopped almonds, and stir well.
Add the flour and mix until well combined.
Pour the mixture into two lined and greased 7.5 cm x 15 cm x 7.5 cm (3" x 6" x 3") loaf tins (I used disposable aluminum foil loaf tins). Bake in the preheated oven for about 1 hour, or until cooked and golden brown. Remove and let cool before serving.
