Apple Coffee Cake

Apple Coffee Cake – sweet and decadent coffee cake loaded with apple, this cake is super easy to bake and perfect with tea or coffee.

Ingredients

  • 3/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups self-rising flour
  • 2-3 Granny Smith apples peeled, cored and diced small
  • 1/3 cup dark brown sugar, firmly packed
  • 1 1/2 teaspoons ground cinnamon

Instructions

  • Preheat the oven to 375°F (190°C). Spray a 10-inch (25cm) cake pan with nonstick spray and set aside.
  • In a KitchenAid Stand Mixer, beat the granulated sugar, butter and egg until combined. Mix in the milk, vanilla extract, self-rising flour and apples. Add apples to your preference.
  • Pour the batter into the prepared pan and spread evenly with a spatula. Sprinkle brown sugar and cinnamon evenly over the top. Use a toothpick to swirl the brown sugar and cinnamon.
  • Bake for 35 minutes or until a toothpick inserted into the middle comes out clean. Transfer the cake to a rack to cool completely; then cut and serve.

Notes

Spices, like ground nutmeg and cloves, can also be added to create warmer flavors.
