Ingredients

Vinaigrette Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Salad

  • 5 ounces (150 grams) 1 bag of baby spinach
  • 1 large tart apple sliced
  • 4 ounces (125 grams) feta cheese crumbled
  • 1/2 cup pecans toasted and chopped

Instructions

  • Prepare the salad dressing by whisking together olive oil, apple cider vinegar, dijon mustard, honey, salt and pepper in a bowl. Set aside.
  • In a separate bowl, add spinach, apple slice, feta cheese, and pecans in a bowl, stir in the vinaigrette dressing, and toss well with a spoon. Serve immediately with additional feta cheese and pecans on top.

Tips:
  1. Use fresh ingredients, such as green baby spinach and crispy tart apples. 
  2. Toast the pecans before adding them to the salad will enhance a nutty flavor and give them a nice crunch. 
  3. Choose a good-quality feta cheese that is creamy, tangy and crumbly. This will add a deep creaminess and saltiness to the salad. 
  4. Toss the salad with the dressing right before serving to prevent the salad from becoming soggy.
