Vinaigrette Dressing
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon dijon mustard
- 1/2 teaspoon honey
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Salad
- 5 ounces (150 grams) 1 bag of baby spinach
- 1 large tart apple sliced
- 4 ounces (125 grams) feta cheese crumbled
- 1/2 cup pecans toasted and chopped
Prepare the salad dressing by whisking together olive oil, apple cider vinegar, dijon mustard, honey, salt and pepper in a bowl. Set aside.
In a separate bowl, add spinach, apple slice, feta cheese, and pecans in a bowl, stir in the vinaigrette dressing, and toss well with a spoon. Serve immediately with additional feta cheese and pecans on top.
