Ingredients

Vinaigrette Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Salad

  • 5 ounces 1 bag of baby spinach
  • 1 large tart apple sliced
  • 4 ounces feta cheese crumbled
  • 1/2 cup pecans toasted and chopped

Instructions

  • Prepare the salad dressing by whisking together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a bowl. Set aside.
  • In a separate bowl, combine the spinach, apple slices, feta cheese, and pecans. Add the vinaigrette dressing and toss well with a spoon. Serve immediately, topped with additional feta cheese and pecans.

  • Use fresh ingredients, such as green baby spinach and crispy tart apples.
