Broccoli Gratin

Ingredients

  • 2 pound (1000 grams) (4 heads) broccoli cut into small florets
  • 1/4 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 teaspoons salt
  • 1 pinch nutmeg
  • 1/2 teaspoon ground black pepper
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup bread crumbs

Instructions

  • Bring water to a boil in a saucepan, blanching the broccoli florets for 2 minutes. Transfer broccoli florets to a bowl filled with cold water, and let them sit for 10 minutes until completely cooled. Drain and set them aside.
  • Preheat the oven to 450°F (230°C). In a saucepan, melt half of the butter over medium heat. Whisk in all-purpose flour, then stir in milk. Season with salt, nutmeg, and ground black pepper. Constantly stir the mixture for 1 to 2 minutes until all ingredients are incorporated. Turn off the heat.
  • In a baking dish greased with butter, arrange the broccoli florets in a single layer. Evenly sprinkle the grated sharp cheddar on top and cover them with the milk mixture.
  • Melt the remaining half of the butter in a skillet over medium heat, add bread crumbs. Cook and stir for 2 minutes until the bread crumbs become golden brown. Turn off the heat, and add the bread crumbs to the gratin.
  • Bake the broccoli gratin for 20 minutes until it is golden brown and bubbly. Serve immediately.

Tips:
  1. This recipe works well with either fresh or frozen broccoli.
  2. Blanching or steaming the broccoli florets before baking them with other ingredients helps to shorten the cooking time. 
  3. Do not overcook the broccoli florets. The broccoli should remain slightly crisp as it will continue to cook in the oven. Blanch the broccoli florets in boiling water for 2-3 minutes or steam for 3-4 minutes for the best result. 
  4. If you're adding cheese to your gratin, choose a good-quality cheese and grate it yourself. Sharp cheddar, Gruyère, or Parmesan work well for added flavor.
