- 2 lbs (1kg) sweet potatoes
- 1 tablespoon olive oil
- 1 Pinch salt
- 3 tablespoons grated parmesan cheese
- Chopped parsley leaves for garnishing
Peel and rinse the sweet potatoes, then cut them into lengthwise strips. Soak the strips in water for 30 minutes. Drain the water and pat them dry with paper towels. Place the sweet potatoes in a large bowl, add olive oil and salt, and set aside.
Preheat the air fryer to 330°F (165°C). Place the sweet potatoes in the cooking basket and cook for 5 minutes, or until crisp. Afterward, slide the tray out and let them cool for a couple of minutes. Increase the temperature to 390°F (198°C), return the sweet potatoes to the basket, and cook for 10-15 minutes.
Transfer the sweet potato fries from the air fryer and sprinkle Parmesan cheese over them. Toss gently to combine, then garnish with parsley. Serve immediately.
- Soaking the cut fries in cold water for 30 minutes helps remove excess starch, which makes a big difference in crispiness. But the key? I make sure to pat them completely dry before cooking—wet fries won’t crisp up!
- For the best texture, I cut the sweet potatoes into even ¼-inch strips. If they’re the same size, they cook evenly and get crispier.
