Ingredients

Filling

  • 1 large Fuji apple peeled and diced
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon

Bread

  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 cup whole milk

Instructions

  • Heat a saucepan over medium-high heat and add the apple, light brown sugar, and ground cinnamon. Stir and cook the ingredients for 2 to 3 minutes until the sugar melts. Turn off the heat and set the filling aside.
  • Preheat the oven to 350°F (177°C). Grease two small loaf pans (5.75" x 3" or 14.6 x 7 cm) with butter. You can also use one regular loaf pan.
  • In a large mixing bowl, beat together the light brown sugar, ground cinnamon, granulated sugar, and unsalted butter until smooth. Whisk in the eggs and vanilla extract.
  • Sift the all-purpose flour and baking powder into the mixture, whisking continuously while adding the milk. Continue mixing until all ingredients are well combined.
  • Divide the batter into two equal portions. Transfer half of the batter to the baking pan and add a layer of apple filling. Cover the filling with the remaining batter, then top with additional apple pieces. (Repeat this process with the remaining batter and filling.)
  • Bake for 35 minutes. Check if the cake is cooked by inserting a toothpick into the center; it should come out clean. Allow the bread to cool in the pan for 10 minutes before unmolding and slicing. It tastes best when fresh and warm out of the oven.

Tips:
  1. Always check the doneness of the cake before removing it from the oven. Insert a toothpick into the center of the cake and it comes out clean.
  2. Bake the cake for 35 minutes if using small loaf pans. It may take 15 to 20 minutes more when baking the cake with a regular loaf pan.
  3. If the top of the cake gets too dark, tent it with aluminum foil to avoid over-browning at the 30-minute mark.
