- 1 cup all-purpose flour
- 3/4 cup rolled oats
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup butter
- 2 large apples peeled, chopped
- 1/2 cup caster sugar granulated sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1/2 tsp vanilla bean seeds (or vanilla extract)
- vanilla ice cream for serving
Preheat the oven to 356°F (180°C). In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, and ground cinnamon. Whisk the ingredients together. Add the butter and rub it into the mixture until well combined.
Transfer half of the flour mixture to a 2 1/2-quart rectangular baking dish, spreading it evenly. Top with the chopped apples.
Split the vanilla bean lengthwise with a sharp knife and scrape out the seeds. In a saucepan, combine the caster sugar, cornstarch, water, and vanilla bean seeds (or vanilla extract). Bring the mixture to a boil, stirring constantly, until it thickens and becomes clear. Remove from heat and pour directly over the apples. Then, cover with the remaining flour mixture.
Bake for 60 minutes, or until the apples are tender and the top is slightly browned. Allow the apple crisp to cool slightly before serving warm. Top with ice cream if desired.
