Servings: 2 people
- 4-6 oz beef tenderloin cut into bite-sized pieces
- 1 lb fresh flat rice noodles
- 2 tablespoons oil
- 2 cloves garlic minced
- 1 cup fresh bean sprouts ends trimmed
- 1 oz green onion (scallion) or yellow chives cut into 2 inches lengths
Marinade
- 2 teaspoons soy sauce
- 1/2 teaspoon dark soy sauce
- 1/2 teaspoon Chinese rice wine or sherry
- 1 heaping teaspoon cornstarch
Seasonings
- 2 1/2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon fish sauce
- 1/2 teaspoon sugar
Add the beef slices, soy sauce, dark soy sauce, Chinese rice wine, and cornstarch to a bowl. Marinate for 15 minutes.
Loosen the flat rice noodles completely to prevent them from clumping together.
Add all the seasoning ingredients to a small bowl and mix well. Set aside.
Heat the oil in a wok or skillet over high heat. Add the garlic and stir-fry until light brown and aromatic. Add the beef and stir-fry until it is half-cooked. Then add the bean sprouts, flat rice noodles, and the seasoning mixture.
Toss the flat rice noodles with a spatula or chopsticks until the seasonings are well combined. Continue stir-frying for another 1-2 minutes, until the noodles are slightly charred. Finally, add the green onion or yellow chives and stir-fry for another 10 seconds.
Turn off the heat and transfer the beef chow fun noodles to a serving platter. Serve immediately.
