Ingredients

  • 12 oz (350g) cherry tomatoes
  • 4 large eggs
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper
  • 3 tablespoons Parmesan cheese
  • 1 tablespoon Italian basil or parsley, chopped
  • 1 1/2 tablespoons olive oil

Instructions

  • Preheat the oven to 350°F (176°C). Rinse the cherry tomatoes with cold water, then drain and pat dry. Set aside. Crack the eggs into a bowl and add salt, black pepper, Parmesan cheese, and the chopped basil or parsley.
  • Heat an oven-safe skillet over medium heat and add 1/2 tablespoon of olive oil. Add the cherry tomatoes and gently toss for 1 minute, being careful not to break them.

  • Add the egg mixture to the skillet and cook until the edges are set but the center is still runny. Transfer the skillet to the oven and bake for 5 minutes.
  • Remove from heat and let cool for a bit. Cut into wedges and serve immediately.
