- 12 oz (350g) cherry tomatoes
- 4 large eggs
- 1/4 teaspoon salt
- 3 dashes ground black pepper
- 3 tablespoons Parmesan cheese
- 1 tablespoon Italian basil or parsley, chopped
- 1 1/2 tablespoons olive oil
Preheat the oven to 350°F (176°C). Rinse the cherry tomatoes with cold water, then drain and pat dry. Set aside. Crack the eggs into a bowl and add salt, black pepper, Parmesan cheese, and the chopped basil or parsley.
Heat an oven-safe skillet over medium heat and add 1/2 tablespoon of olive oil. Add the cherry tomatoes and gently toss for 1 minute, being careful not to break them.
Add the egg mixture to the skillet and cook until the edges are set but the center is still runny. Transfer the skillet to the oven and bake for 5 minutes.
Remove from heat and let cool for a bit. Cut into wedges and serve immediately.
