Earl Grey Icebox Cookies

Ingredients

  • 1 stick unsalted butter, softened
  • 1/2 cup confectioners sugar
  • 1 egg yolk
  • 1 1/4 cup all-purpose flour
  • 1 tablespoon 1 tea bag earl grey tea leaves
  • 2 tablespoons granulated sugar optional

Instructions

  • In a large mixing bowl, cream butter and sugar until smooth with a hand mixer (or a stand mixer with a whip attachment).
  • Beat in egg yolk until well combined.
  • In a separate bowl, whisk well all-purpose flour and earl grey tea. Gradually add the dry ingredients to the wet ingredients and mix until well combined with a silicon spatula.
  • Transfer the dough onto a sheet of parchment paper (or waxed paper) and shape it into a log. Roll tightly in the parchment paper and refrigerate for at least 2 hours, or overnight.
  • Preheat the oven to 320°F (160°C).
  • Remove the dough from the refrigerator. Spread granulated sugar on a piece of parchment paper and roll the dough over the sugar to coat evenly. Slice the dough into thin rounds, about 1/4 inch (5mm) thick.
  • Place the rounds on a baking sheet lined with parchment paper and bake for 13 to 15 minutes until the edges are slightly browned.
  • Allow the cookies to cool a little bit on the baking sheet, then transfer them onto a wire rack and cool completely.

Notes

Tips:
  1. Soften the unsalted butter at room temperature.
  2. Use confectioners sugar when mixing with butter to get a smooth and creamy texture.
  3. Add dry ingredients to the wet ingredients and mix until just combined with a silicon spatula. Do not overmix the batter.
