Instructions
In a small saucepan over low heat, add the sugar and water.
Do not stir. Let the mixture come to a gentle boil.
Gently swirl the pan to help the caramel cook evenly.
Once the caramel turns light amber, continue swirling the pan occasionally as it darkens.
Swirl until the caramel reaches a golden amber color, then immediately turn off the heat.
Immediately pour the caramel into your desired pan or container.
