15-Minute Soba Noodle Soup

Ingredients

  • 1 bundle soba noodles
  • 1 1/2 cups water
  • 2 tablespoons bonito flavored soup base Mizkan
  • 1 oz (30g) buna shimeji mushroom
  • 1 bunch baby bok choy
  • 1 hard-boiled egg halved

Toppings:

  • white sesame
  • scallion chopped

Instructions

  • Heat a pot of water and bring it to a boil. Cook the soba noodles until al dente, about 5 minutes. Drain and set aside in a bowl.
  • In the meantime, heat 1 1/2 cups of water and bring it to a boil. Add the Mizkan (Bonito Flavored) Soup Base, along with the mushrooms and baby bok choy. Boil for about 1 minute, or until they are cooked.
  • Add the egg on top of the soba noodles, then pour the soup over them. Top with sesame seeds and scallions.

Notes

Mizkan (Bonito Flavored) Soup Base is a magical condiment that you can use to make a variety of authentic Japanese dishes: cold soba dipping sauce, the broth for noodles such as udon and soba. There is no need to make dashi from scratch when you use Mizkan (Bonito Flavored) Soup Base.
