Garlic Butter Salmon Kebab

Ingredients

  • 1 1/2 lbs (750g) salmon
  • 1 tablespoon olive oil
  • salt
  • ground black pepper
  • 2 cloves garlic minced
  • 3 tablespoons salted butter melted
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley or mixed herbs oregano, thyme, chives

Instructions

  • Cut the salmon into 1 inch (2.5cm) cubes. Transfer to a bowl and season with olive oil, pinch of salt and ground black pepper. Thread 3 pieces of salmon into each skewers.
  • Mix the garlic, melted butter, lemon juice and herb together. Make sure the butter is fully melted and mix well with the other ingredients.
  • Fire up a grill and grill the salmon for about 1 to 2 minutes on each side, or until cooked. Transfer the grilled salmon kebab to a platter and drizzle the garlic butter on the salmon. Serve immediately.

Notes

If you use a bamboo skewer, soak the skewers in cold water for at least 30 minutes to prevent burning while grilling. If you don't have a grill, you may cook the salmon on a grill pan.
