Ingredients

  • 1 1/2 lbs (750g) salmon
  • 1 tablespoon olive oil
  • salt
  • ground black pepper
  • 2 cloves garlic, minced
  • 3 tablespoons salted butter, melted
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley , or mixed herbs (oregano, thyme, chives)

Instructions

  • Cut the salmon into 1-inch (2.5 cm) cubes. Transfer them to a bowl and season with olive oil, a pinch of salt, and ground black pepper. Thread three pieces of salmon onto each skewer.
  • Mix the garlic, melted butter, lemon juice, and herbs together, ensuring that the butter is fully melted and well combined with the other ingredients.
  • Preheat the grill and cook the salmon for about 1 to 2 minutes on each side, or until cooked through. Transfer the grilled salmon kebabs to a platter and drizzle the garlic butter over them. Serve immediately.

Notes

If you use a bamboo skewer, soak the skewers in cold water for at least 30 minutes to prevent burning while grilling. If you don’t have a grill, you may cook the salmon on a grill pan.

This was a fabulous recipe. I adjusted the ingredients for 1 pound of salmon instead of 1.5. I minced up fresh thyme as my herbs (I’m crazy about thyme) and it was wonderful. If I didn’t have fresh thyme I would certainly use ground thyme!
We had it with white rice and frozen peas. Great meal!
