Ingredients

  • 1 cup chicken cut into small pieces and season with salt and pepper
  • 4 slices bacon cut into small pieces
  • 2 bell pepper cut into small pieces
  • 2 tablespoons ranch dressing (or any creamy dressing)
  • 4 flour tortillas
  • 2 cup shredded cheddar cheese
  • 2 cup shredded mozzarella cheese

Instructions

  • Heat a frying pan over medium heat and add chicken, bacon, and bell pepper. Stir fry for 5 to 8 minutes or until the chicken meat is white and cooked through. Transfer to a bowl, add ranch dressing, and stir well to coat the ingredients evenly.
  • Place a tortilla slice in a nonstick frying pan and sprinkle 1/2 cup of shredded cheddar and mozzarella cheese on it. Layered with the chicken and bacon mixture and another 1/2 cup of shredded cheese. Finally, cover it with a piece of tortilla slice on top.
  • Cook over medium heat for 3 to 4 minutes with the lid covered, then flip over and cook the other side for an additional 3 to 4 minutes until the bottom of the quesadilla turns golden brown and the cheese melts in the center. (Repeat the same for the second quesadilla).
  • Dish out and serve with more ranch dressing on top if desired.

Tips:
  1. To save time, you may also use pre-cooked chicken, such as leftover rotisserie chicken or grilled chicken. It helps reduce the cooking time and ensures the chicken is fully cooked.
  2. For the crispy, golden brown tortillas, you may control the temperature of the stove and keep it at medium heat for the best result. 
  3. Don't overload the quesadilla. While it's tempting to stuff the quesadilla with a generous amount of filling, be mindful not to overload it, as it may make it difficult to flip and cook evenly.
