Chicken And Bacon Quesadilla

Ingredients

  • 1 cup chicken cut into small pieces and season with salt and pepper
  • 4 slices bacon cut into small pieces
  • 2 bell pepper cut into small pieces
  • 2 tablespoons ranch dressing (or any creamy dressing)
  • 4 flour tortillas
  • 2 cup shredded cheddar cheese
  • 2 cup shredded mozzarella cheese

Instructions

  • Heat a frying pan over medium heat and add the chicken, bacon, and bell pepper. Stir-fry for 5 to 8 minutes, or until the chicken is cooked through and no longer pink. Transfer to a bowl, add ranch dressing, and stir well to coat the ingredients evenly.
  • Place a tortilla in a nonstick frying pan and sprinkle 1/2 cup of shredded cheddar and mozzarella cheese on it. Layer with the chicken and bacon mixture and another 1/2 cup of shredded cheese. Finally, cover with another tortilla.
  • Cook over medium heat for 3 to 4 minutes with the lid covered, then flip and cook the other side for an additional 3 to 4 minutes, until the bottom of the quesadilla is golden brown and the cheese is melted in the center. (Repeat the same process for the second quesadilla.)
  • Dish out and serve with additional ranch dressing on top, if desired.

  • To save time, you may also use pre-cooked chicken, such as leftover rotisserie chicken or grilled chicken. It helps reduce the cooking time and ensures the chicken is fully cooked.
  • For the crispy, golden brown tortillas, you may control the temperature of the stove and keep it at medium heat for the best result. 
  • Don't overload the quesadilla. While it's tempting to stuff the quesadilla with a generous amount of filling, be mindful not to overload it, as it may make it difficult to flip and cook evenly.
