Asari Miso Soup (Miso Soup with Clams)

Ingredients

  • 3 - 4 cups water
  • ½ block soft tofu cut into small cubes
  • 2 oz (60g) buna shimeiji mushroom
  • ½ pound (250g) manila clams
  • 2 tablespoons dashi-flavored red miso paste or white miso paste
  • scallions chopped

Instructions

  • Bring the water to a boil. Add the soft tofu and mushrooms, then add the clams. Boil for about 2 minutes, or until all the clams have opened.
  • Turn off the heat and add the miso (do not boil the miso). Stir with chopsticks or a ladle until dissolved. Top with the chopped scallions and serve hot with steamed rice.
