Blinis

An easy homemade Russian Blinis recipe brings you the best appetizer with smoked salmon slices, sour cream, and fresh dill on the top.

Ingredients

  • 1/3 cup buckwheat flour
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 medium egg 2 oz with shell
  • 5 tablespoons unsalted butter divided

Toppings

  • 6 oz smoked salmon slices
  • 1/4 cup sour cream
  • fresh dill

Instructions

  • In a bowl, combine buckwheat flour, all-purpose flour, baking powder, and salt. Set aside
  • In another bowl, whisk together the milk, egg, and two tablespoons of melted butter. Pour this mixture into the dry ingredients and whisk until well combined.
    Mix wet and dry ingredients for blinis
  • Heat 1 tablespoon of butter in a nonstick frying pan over medium heat. Spoon 1 tablespoon of batter into the pan for each blini. Cook each blini for about 2 minutes on each side, or until golden brown around the edges. Gently flip the blinis to cook both sides evenly.
    Cook blinis
  • Remove the blinis from the pan and wipe it with a paper towel. Add more butter to the pan and repeat the process with the remaining batter, cooking each blini until golden brown on both sides.
  • Serve the blinis with a thin slice of smoked salmon, topped with sour cream and a sprinkle of fresh dill.
