Season the chicken thighs with salt and ground black pepper on both sides. In a bowl, combine all the ingredients for the sauce and whisk until well mixed. Set aside.
Heat a skillet (preferably cast-iron) and pan-fry the chicken thighs skin side down. Turn the chicken over and continue to pan-fry until the skin is golden brown and the meat side is nicely browned and crispy. Set aside.
Discard the chicken fat from the skillet. Add the butter and let it melt and foam until it turns light brown. Add the garlic and sauté for 10 seconds. Transfer the chicken back into the skillet, then add the sauce.
Turn the heat to low and simmer to reduce the sauce to a thicker consistency, until it becomes sticky and golden brown, ensuring the chicken is cooked through. Flip the chicken a couple of times during cooking. Turn off the heat, garnish with parsley and lemon, and serve immediately.
Notes
Cut the inside of the chicken to check doneness. If the sauce dries up before the chicken is cooked, add some water and continue to cook the chicken.
