- 1 lb (500g) baby carrots
- 3 tablespoons unsalted butter melted
- 4 cloves garlic
- 1 1/2 tablespoons maple syrup
- 1/4 teaspoon salt
- 3 dashes ground black pepper
- 1 tablespoon thyme and Italian parsley
Preheat the oven to 425°F (218°C). Rinse the baby carrots under cold running water, then drain and set aside.
In an oven-safe skillet (preferably cast iron), heat the melted butter over medium heat. The butter will turn into brown butter once it starts to bubble and becomes light brown in color.
Add the garlic and sauté for a minute before adding the carrots, maple syrup, salt, pepper, and herbs.
Transfer the carrots to the oven and roast for 15 to 20 minutes, or until they are tender and soft. Serve immediately.
