Ingredients

  • 1 lb (500g) baby carrots
  • 3 tablespoons unsalted butter melted
  • 4 cloves garlic
  • 1 1/2 tablespoons maple syrup
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper
  • 1 tablespoon thyme and Italian parsley

Instructions

  • Preheat the oven to 425°F (218°C). Rinse the baby carrots under cold running water, then drain and set aside.
  • In an oven-safe skillet (preferably cast iron), heat the melted butter over medium heat. The butter will turn into brown butter once it starts to bubble and becomes light brown in color.
  • Add the garlic and sauté for a minute before adding the carrots, maple syrup, salt, pepper, and herbs.

  • Transfer the carrots to the oven and roast for 15 to 20 minutes, or until they are tender and soft. Serve immediately.
