Season the scallops with salt and pepper. Heat a skillet over medium heat and add the butter. As the butter melts, it will slowly turn brown and begin to foam.
Place the scallops in the hot skillet and sear on both sides until cooked through.
Add the lemon peel and parsley, then serve immediately.
Notes
You may add a splash or two of white wine as you sear the scallops. It's optional.
