Ingredients

  • 3 tablespoons butter
  • 8 oz (230g) potatoes peeled and cut into small cubes
  • 4 oz (125g) white mushroom or cremini mushroom, stems removed and sliced
  • 1 pinch salt
  • some chopped parsley leaves

Instructions

  • Add 2 tablespoons of butter to a sauté pan or skillet over medium heat. Add the potatoes and sauté until they are slightly charred and light golden brown. Push the potatoes to one side.
  • Add the remaining 1 tablespoon of butter and sauté the mushrooms. Once the mushrooms are cooked, stir to combine them with the potatoes.
  • Add a pinch of salt and the chopped parsley, then stir to combine well. Dish out and serve immediately.
