Servings: 4 people
- 1 teaspoon chili powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon brown sugar
- 4 ears shucked corn
- cooking spray
- 1 teaspoon grated lime zest
- 2 teaspoons unsalted butter softened
- lime wedges
Combine the chili powder, kosher salt, and sugar in a small bowl. Rub the spice mix over the corn.
Heat a grill pan over medium heat. Coat the grill pan with cooking spray. Add the corn to the pan and cook for 10 minutes, or until completely cooked through. Turn the corn occasionally to ensure it cooks evenly.
Remove the corn from the pan. Top the corn with lime zest and butter. Serve immediately with lime wedges. Squeeze some lime juice over the corn before eating.
- Get your grill pan nice and hot before adding the corn. This helps you get those great grill marks and a good sear.
- Don’t skimp on the chili powder, salt, and sugar. Make sure you coat the corn evenly for the best flavor.
- Turn the corn regularly to make sure it cooks evenly and gets a nice, even char.
- If you’re cooking a lot of corn, make sure you don’t overcrowd the pan. Give each piece enough space to cook evenly.
- The corn is done when it’s tender and has a nice char. You can test it by poking a kernel with a fork to make sure it’s cooked through.
