Chipotle Lime Shrimp

Chipotle Lime Shrimp - Skillet shrimp with smoky chipotle chili pepper, lime juice, honey and garlic. Takes 15 minutes to make and so delicious.

Ingredients

  • 1 lb. (450g) shrimp shelled, deveined and tail-on
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon honey
  • 1 1/2 tablespoons lime juice
  • 1/2 teaspoon Chipotle Chili Pepper Powder or more to taste
  • 1/4 teaspoon salt
  • 1 tablespoon parsley or cilantro, chopped
  • fresh lime wedges

Instructions

  • Rinse the shrimp under cold water, then drain and pat dry with paper towels. Set aside.
  • Heat a skillet (preferably cast iron) over medium heat and add the olive oil. Once the oil is hot, add the garlic and sauté briefly with a spatula. Add the shrimp to the skillet, stirring and cooking them. Incorporate the honey, lime juice, chipotle chili pepper, and salt, stirring to combine well with the shrimp. Continue stirring and turning the shrimp to ensure both sides are cooked evenly.
  • Add the parsley or cilantro and stir to combine well. Turn off the heat and serve immediately with fresh lime wedges. Squeeze lime juice over the shrimp before eating.

Notes

I used McCormick Chipotle Chili Pepper, which is amazing with a nice smoky flavor.
