Ingredients

  • 4 American bananas overripe
  • oil for deep frying

Frying Batter

  • 1 egg white
  • 1/2 cup all-purpose flour sifted
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup water ice cold
  • 1 tablespoon oil

Instructions

  • Cut the bananas into 1-inch (2.5 cm) pieces and set aside.
  • In a large bowl, mix all the ingredients for the Frying Batter together. Stir well to ensure the batter is smooth. Gently fold the bananas into the batter.
  • Heat a small pot with 2-3 inches (5-7 cm) of oil over high heat. The oil is ready when fully heated and a swirl of smoke rises from the surface. Gently drop each piece of banana into the hot oil. Deep-fry the bananas in batches, turning them over so both sides become golden brown and crispy.
  • Use a slotted spoon to remove the fried bananas from the oil, and drain them on a plate lined with paper towels. Repeat step 3 until all the bananas are used up. To serve, dust the bananas with powdered sugar. You may also serve them with maple syrup and chocolate sauce.

Notes

If you want your batter to be extra crispy, add 2 tablespoons or rice flour into the batter.
