- 2 lbs. (1 kg) fresh carrots with tops
- 1 tablespoon olive oil
- 1 tablespoon bottled Italian seasonings
- 1/4 teaspoon salt
- 2 tablespoons Parmesan cheese
- Fresh oregano
Preheat the oven to 400°F (207°C).
Chop off the carrot tops and peel the skin from the carrots using a vegetable peeler.
Arrange the carrots on a baking sheet and drizzle olive oil over them. Turn and roll the carrots to ensure they are evenly coated with the oil. Sprinkle the Italian seasoning over the carrots, followed by the salt.
Roast the carrots for 15 minutes, then remove them from the oven and sprinkle the Parmesan cheese evenly over the carrots. Return the carrots to the oven for a few more minutes, or until the cheese melts. Remove from the oven, top with fresh oregano, and serve immediately.
