Ingredients

  • 1 lb (500g) baby carrots
  • 2 tablespoons unsalted butter melted
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 tablespoon chopped parsley
  • 1/3 cup shredded Parmesan cheese

Instructions

  • Preheat the oven to 400°F (207°C).
  • In a mixing bowl, combine the carrots, butter, garlic, lemon juice, salt, and parsley. Stir and toss well.
  • Transfer the carrots to an oven-safe skillet and top them with the Parmesan cheese. Roast for 30 minutes, or until tender. Dish out and serve immediately.
