- 2 1/2 pounds (1.1kg) potatoes peeled
- 2 tablespoons butter
- 1/4 cup heavy cream
- 15 oz (425g) pumpkin
- 2 tablespoons maple syrup or to taste
- salt to taste
- freshly ground black pepper
- 1/3 cup Parmesan cheese
- 1 slice bacon cut into small pieces
Place the potatoes in a large pot and cover them with water. Bring to a boil, then reduce the heat to medium-low and cook the potatoes for 20 minutes, or until they are completely tender. Drain the water.
Preheat the oven to 350°F (175°C). Mash the potatoes and stir in the remaining ingredients until smooth. Taste and adjust the seasonings as needed.
Transfer the mashed potatoes to a baking dish and top with Parmesan cheese. Bake until the surface turns golden brown, about 15 minutes. Meanwhile, pan-fry the bacon bits until crispy.
Remove from the oven and top with the bacon bits. Serve warm.
