Equipment

  • 6 wooden skewers 15 cm, soaked in water for 30 minutes

Ingredients

MEAT

  • 2 pounds (1kg) boneless pork shoulder sliced 1/4 inch (5mm) thick and cut into 4-inches (10cm) strips

MARINADE

  • 14 oz (400g) coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 1/2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 teaspoon ground white pepper
  • 1/3 cup condensed milk

Instructions

  • In a saucepan, combine all the marinade ingredients and whisk over moderate heat until the sugar dissolves. Transfer the marinade to a large bowl and let it cool completely.
  • Combine the pork with the marinade, cover with plastic wrap, and refrigerate for 1 hour.
  • Preheat the grill. Thread the pork onto skewers and cook over medium-high heat, turning occasionally, until the pork is lightly charred and cooked through. Serve immediately.
